This study aimed to examine the prebiotic effect of Carao (Cassia grandis) pulp powder on probiotic characteristics Lactobacillus acidophilus regarding viability, enzymatic activity, lysozyme resistance, bile and acid tolerances, tolerance gastric juices. was used at 0% (control), 1%, 2%, 3% (w/v). Acid were determined 0, 30, 60, 90, 120 min incubation, whereas analyzed 4, 8 h. The juice pH 2, 3, 5, 7 during 0 30 incubation. protease evaluated 12, 24 h bacterial viability experiment carried out for 10 h, taking readings every hour. Low-acidity conditions used, no significant differences found between control different concentrations added L. study. samples 2% had significantly (p < 0.05) higher counts resistance activity when compared samples. On other hand, addition did not impact tolerance, resistance. Thus, could act as a source enhance development gastrointestinal digestion.
